NUTRITIOUS OAT-RAISIN BARS | |
1 c. quick oats 1/2 c. hot water 1 c. firmly packed brown sugar 1/2 c. butter 2 eggs 1 tsp. vanilla 1 c. flour 1/2 c. non-fat dry milk 2 tsp. cinnamon 3/4 tsp. baking powder 1 c. raisins 1 c. chopped nuts 1 tbsp. sesame seeds Stir together oats and hot water; let stand 5 minutes. Place brown sugar and butter in medium saucepan. Melt over medium low heat, stirring constantly. Remove from heat. Stir in eggs and vanilla. Combine flour, non-fat dry milk, cinnamon, and baking powder; stir into sugar mixture. Stir in softened oats, raisins, and nuts just until blended. Pour into buttered 13 x 9 x 2 inch baking dish. Sprinkle with sesame seeds. Bake at 350 degrees for 17-22 minutes. Cool on wire rack. Cut into bars. Makes about 2 dozen bars. NOTE: Good for lunches on band trips. |
