FIESTA MEXICAN PIE 
1/2 lb. ground beef
1 med. green pepper, chopped
1/4 c. chopped onion
1 (8 oz.) jar Cheez Whiz
1 1/2 tsp. chili powder
1/2 c. chopped tomato
2 eggs, beaten
3/4 c. flour
1/2 tsp. salt
1/3 c. milk
1 tbsp. cornmeal

Brown meat; drain. Add green pepper and onion. Cook until tender. Add half of Cheez Whiz and chili powder. Stir over low heat until process cheese spread is melted. Stir in tomato. Combine remaining Cheez Whiz, eggs, flour, salt and milk; beat until smooth. Pour into greased 9" pie plate; sprinkle with cornmeal. Spoon meat mixture over batter to within 1" of edge. Bake at 400 degrees for 25 to 30 minutes or until golden brown. Let stand 5 minutes before serving. Makes 6 to 8 servings.

Variation: For a zestier fiesta, substitute Cheez Whiz with jalapeno peppers.
