QUICK CHEESE CAKE 
1 packet Knox unflavored gelatin
1/2 c. sugar
1 c. boiling water
2 (8 oz.) pkg. cream cheese, softened
1 tsp. vanilla
Your choice of topping

Mix gelatin, sugar and boiling water. Stir until completely dissolved. With mixer, beat in cream cheese and vanilla. Mix until smooth. Pour into prepared crust and chill until firm (2-3 hours). Add topping. Use 9 x 13 inch pan.

GRAHAM CRACKER CRUST:

1 1/2 c. graham cracker crumbs
1/4 c. sugar
1/2 c. butter, melted
