ZUCCHINI BREAD | |
3 eggs 1 c. oil 2 c. sugar 1 tsp. vanilla 2 c. raw zucchini squash 1 tsp. baking soda 3 c. flour 1/2 to 1 tsp. cinnamon 1/2 tsp. salt 1/4 tsp. baking powder 1/2 tsp. nutmeg 1 c. chopped nuts Grate raw zucchini. If too large, remove seed and pulp. Mix eggs, oil, and zucchini in a large bowl. Add remaining ingredients and mix well. Pour into floured 7 inch loaf pan. Bake at 350 degrees for 1 hour. It also may be frozen. |
