GREEN BEANS WITH TOMATOES 
1 lb. fresh green beans, cut
2 tbsp. shortening
1/2 c. onions, chopped
2 tbsp. flour
1/4 tsp. salt
1/8 tsp. pepper
1 c. milk
2 c. sharp cheese, grated
2 ripe tomatoes

Cook beans. Melt shortening; add onions, saute until golden. Stir in flour, salt and pepper to make a smooth paste. Add milk gradually, cook stirring until thickened. Add cheese and stir until melted. Place hot beans in buttered casserole. Pour on 3/4 of the cheese sauce. Cover beans with tomato slices, sprinkle with salt. Top with rest of cheese sauce. Place under broiler for 5 minutes.
