SWEET POTATO CASSEROLE 
6 med. yams, baked and peeled
1/4 c. butter
1/4 tsp. salt
1 tsp. vanilla
1/2 tsp. ground cinnamon
3 tbsp. sugar
2 eggs or egg substitute

Mash yams and mix with all the ingredients except those for the topping. Place this mixture in a greased baking dish.

TOPPING:

1/4 c. butter
3/4 c. brown sugar
1/2 c. chopped pecans
3 tbsp. all-purpose flour

Chop sugar, flour and pecans into butter. Sprinkle mixture on top of sweet potato mixture. Bake in preheated oven at 325 degrees for 45 minutes.
