MEAT LOAF | |
2 slightly beaten egg whites 1/4 c. fine dry bread crumbs 1/4 c. finely chopped onion 1/4 c. finely chopped green pepper or shredded carrot 1/4 c. skim milk 2 tbsp. snipped parsley 1/2 tsp. dried sage thyme, basil, or oregano, crushed 1/4 tsp. salt 1/4 tsp. pepper 12 oz. 90% lean ground beef 1 tbsp. bottled barbecue sauce or catsup In a medium mixing bowl, stir together the egg whites, bread crumbs, onion, green pepper or carrot, milk, parsley, sage, thyme, basil, or oregano, salt and pepper. Add ground beef and mix well. In a shallow baking dish pat mixture into a 6 X 3 X 1 1/2 inch loaf. Bake in a 350°F oven for 40 to 50 minutes or till no pink remains. Transfer meat loaf to a serving platter. Spoon the barbecue sauce or catsup over the meat. Makes 4 servings. |
