FISH KALIA | |
2 lbs. cod or haddock fillet Salt to taste 2 tsp. ground turmeric 4 oz. oil 1 tsp. cumin 2 sticks cinnamon 3 pods cardamom 2 onions, sliced 2-3 bay leaves 1 tsp. sugar 1 onion, ground 1 tbsp. ground chili 1 tsp. ground cumin 1 tsp. garam masala 1 tsp. ginger juice 4 oz. yogurt 2 tomatoes, sliced Cut fish into big pieces. Wash and rub with salt and ground turmeric. Set aside for 30 minutes. Heat oil in a pan over medium heat and brown fish pieces. Remove to a dish. The oil can be strained for the next stage. In a clean saucepan, reheat strained oil on medium heat and fry cumin, cinnamon, and cardamom for 1/2 minute, then add onion slices and bay leaves and stir until onion slices are limp. Add sugar, ground ingredients, garam masala, ginger juice, yogurt, 2 ounces cold water and salt to taste. Stir-fry until liquid dried up, and add fried fish and 3/4 pints cold water for gravy. When fish is cooked and gravy thickened, add tomato slices and remove from heat. Serve with rice. |
