CRUNCHY BAKED FISH 
1 1/2 to 2 lbs. perch
1/4 c. whole wheat flour
1/4 c. GrapeNuts or Bran Flakes
1/2 tsp. garlic powder
1/2 tsp. onion powder
1 tbsp. chopped fresh parsley
1/2 c. plain lowfat or nonfat yogurt

Rinse fish under running water and remove scales. Mix dry ingredients and parsley together. Dip fish in yogurt, then in flour mixture. Place on your foil-lined shallow baking dish that has been preheated. Bake at 400 degrees for 20 to 25 minutes. For a crisper crust, brown under broiler for 2 to 3 minutes. Makes 4 servings.
