CHOCOLATE MOUSSE 
3 eggs
1/2 c. sugar
1/2 lb. semi-sweet chocolate, melted
1 pt. heavy cream, whipped
1/2 tsp. rum extract

Combine sugar and eggs in a stainless bowl. Place over pot of boiling water and whip constantly until mixture becomes thick and lemon colored. Stir in melted chocolate.

In a separate bowl, whip the cream and fold into chocolate mixture. Season with rum extract. Pour into individual glass serving dishes or a 10 inch glass dish. Allow to set 5 hours or overnight. Garnish with whipped cream and grated chocolate if desired.
