THE CHOCOLATE MOUSSE TO DIE FOR! 
8 oz. semi-sweet chocolate
4 oz. unsweetened chocolate
3/4 c. unsalted butter
5 eggs, separated
2 tsp. vanilla
2 tbsp. very strong coffee
Pinch of cream of tartar
1/4 c. sugar
1 c. heavy cream, whipped

Melt chocolate and butter in microwave until smooth. Beat egg yolks in large bowl and add chocolate. Beat egg whites with cream of tartar to a soft peak. Gradually add sugar. Continue to beat until stiff. Whisk 1/3 of the whites into chocolate mixture, "fold" the rest in. Fold the whipped cream into mixture. Refrigerate. Serve with more whipped cream.

Since microwave ovens vary in power, you may need to adjust your cooking time.
