THE CHOCOLATE MOUSSE TO DIE FOR! | |
8 oz. semi-sweet chocolate 4 oz. unsweetened chocolate 3/4 c. unsalted butter 5 eggs, separated 2 tsp. vanilla 2 tbsp. very strong coffee Pinch of cream of tartar 1/4 c. sugar 1 c. heavy cream, whipped Melt chocolate and butter in microwave until smooth. Beat egg yolks in large bowl and add chocolate. Beat egg whites with cream of tartar to a soft peak. Gradually add sugar. Continue to beat until stiff. Whisk 1/3 of the whites into chocolate mixture, "fold" the rest in. Fold the whipped cream into mixture. Refrigerate. Serve with more whipped cream. |
