STIR-FRIED LIVER 
1/2 lb. liver
1/4 c. flour
1 tbsp. corn oil
1 c. mushrooms
1 bunch green onions
1/2 green pepper
Soy sauce
Water/pepper to taste

Cut rinsed liver into thin strips. Lightly flour and shake off excess. Heat oil over medium/high heat. Sear liver, stirring constantly. Lower heat. Add onions, pepper and mushrooms. Continue to stir. Add 1 tablespoon soy sauce and 1/2 cup water. Stir as needed for about 5 to 8 minutes. Cover skillet and let simmer for 10 minutes. More water may be added as needed. Also add soy sauce to taste. Serve over 1/2 to 1 cup rice.
