SWEET POTATO CASSEROLE 
5 med. sweet potatoes, peeled, cooked & mashed
1/3 c. milk
3 tbsp. light brown sugar
2 tbsp. sugar
2 tbsp. butter, melted
1/2 tsp. salt
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1/4 tsp. ground ginger
1 c. miniature marshmallows, optional
1 c. chopped pecans, optional

Combine all ingredients except marshmallows. Mix well. Spoon into lightly greased 1 1/2 quart casserole dish. Bake at 375 degrees for 30 minutes. Uncover, bake 5 more minutes with marshmallows and pecans.
