FRESH APPLE CAKE 
1 1/2 c. oil
2 c. sugar
3 eggs, beaten
1 tsp. vanilla
1/2 tsp. salt
3 c. flour
1 tsp. baking soda
1 tsp. cinnamon
3 c. fresh apples, chopped
1 c. nuts, chopped

Mix first 4 ingredients and sift dry ingredients. Add to liquid mixture. Stir well. Add apples and nuts. Bake in a tube or Bundt pan at 350 degrees for 45 minutes to an hour. Ice with caramel icing.

CARAMEL ICING:

2 c. sugar
1 tsp. vanilla
2 tbsp. flour
1 c. cream
1/2 c. butter

Mix flour and sugar. Add cream. Cook until thick and add butter and vanilla; continue cooking until butter is melted.
