CREAM OF WILD RICE SOUP | |
1/4 c. butter 2 c. cooked wild rice 2 tbsp. slivered almonds 1/2 c. dried onions 1/2 c. diced celery 1/2 c. diced carrots 1 tbsp. Knorr Swiss Aromar seasoning or other seasoning salt 1 qt. chicken stock 1 pt. whipping cream Melt butter in a large heavy pan. Saute the wild rice, almonds, onion, celery, and carrots. Add seasoning salt and stock and simmer for 1 hour. Add cream just before serving and cook until cream is warm. Serves 6-8. |
