MEXI-NOODLE CASSEROLE | |
3/4 lb. hamburger 1 lg. can tomato sauce 1 can of mexicorn 1 1/2 c. cheddar cheese (grated), save 1/2 cup for topping 1 (12 oz.) pkg. egg noodles (I prefer the narrow ones) Brown hamburger in large skillet, drain off excess fat. Stir in tomato sauce, grated cheese, and drained mexicorn. Prepare noodles as directed on package. Drain and put noodles into a large (4 quart) ovenproof bowl or casseorle. Add skillet ingredients, stir and sprinkle the top with 1/2 cup grated cheddar cheese. Bake at 350 degrees for 10 to 15 minutes, until the cheese melts. This is a great dish to serve if you're in a hurry, just put it under the broiler for a minute or two, as the other ingredients are all hot. Serves 12 to 15 people. This is a terrific one dish meal with a tossed salad and garlic bread perfect for the "working wife" or that unexpected company! |
