KAHIKIS ALMOND COOKIES 
1 lb. shortening
1 lb. granulated sugar
1 tsp. almond extract
6 eggs
2 lbs. all-purpose flour (carefully sifted)
1 tsp. baking soda (carefully sifted)
1 lb. whole roasted almonds

Mix shortening and sugar. Blend thoroughly with almond extract and eggs. Add sifted flour and baking soda. Mix well.

Roll into round balls. Place half almond on top - do not flatten. Heat oven to 300 degrees.

Place cookies on greased baking sheets and bake for 50 minutes. It is very important that the oven temperature be exactly 300 degrees. Makes approximately 4 dozen cookies.
