STIR - FRIED CHICKEN &
VEGETABLES
 
1 clove garlic, minced
1/4 c. scallions, chopped
1/2 head broccoli
1/4 lb. mushrooms
1/2 sweet red pepper, sliced
1/4 lb. snow peas
2 whole (boneless) chicken breasts (skinned & cut in sm. pieces)
2 tbsp. soy sauce
1/2 c. corn oil
2 c. cooked brown rice

Heat oil in wok or large frying pan. Add garlic and scallions and cook until brown. Add chicken and stir fry until white all over. Add broccoli and red pepper and stir fry for 2 minutes. Add mushrooms and snow peas and stir fry for a few more minutes, adding soy sauce. Serve over cooked brown rice. Yield approximately 4 servings.
