CREAMY POTATO SOUP 
2 tbsp. minced onion
2 tbsp. butter
1 tbsp. fresh parsley, minced
2 c. potatoes, cut into cubes
4 c. milk
3 c. water
Salt

Saute onion and parsley in butter until onions are well cooked. Add water and potatoes to onions and parsley. Bring to a boil; cover, reduce heat and simmer 15 to 20 minutes or until potatoes are tender, stirring occasionally.

Combine potato mixture and milk. Cook over low heat, stirring constantly until milk and potato mixture is heated. Salt to taste. Garnish each serving with croutons. Serves 4.
