BERRY PIE WITH A DIFFERENCE 
1 baked pie shell
1 tbsp. water
3/4 tsp. sugar
4 c. blackberries (raspberries & strawberries also work)
1 c. sugar
3 tbsp. cornstarch
Dash salt
2 tbsp. sugar
1/2 pt. whipping cream, whipped or
1 carton Cool Whip or vanilla ice cream

Boil 3/4 teaspoon sugar and water for glaze just long enough to become syrupy. Brush on baked shell to seal crust so less juice will penetrate. Wash berries and drain.

Into microwave safe bowl put 2 cups berries; mash. Combine sugar, cornstarch and salt. Add to mashed berries. Cook until thick, stirring often. Place remaining 2 cups fresh berries into pie shell. Sprinkle 2 teaspoons sugar over fresh berries. Pour cooked berry mixture over fresh berries in shell. Refrigerate until cool. Top with Cool Whip or ice cream when serving.

Since microwave ovens vary in power, you may need to adjust your cooking time.
