BEET SALAD 
1 pkg. (3 oz.) lemon or raspberry Jello
1 1/2 c. diced drained beets (save liquid)
1 c. beet liquid (add water to make 1 c.)
1 tsp. salt
3/4 c. orange or pineapple juice
2 tbsp. apple cider vinegar

Heat beet liquid to boiling. Add other ingredients. Stir and put into prepared mold. Chill several hours.

If served with spiced pineapple it makes a festive salad for Christmas.
