CHICKEN FRICASSEE 
1 chicken breast
1/2 pkg. frozen peas & carrots
3 chopped stalks celery
1 sm. chopped onion
1 can cream of celery soup
1 pkg. chicken gravy mix
1/3 jar pimentos
Rice

Simmer 1/2 inch of water in a pot covered with celery, onion, chicken, salt and pepper for 1 hour. Take chicken out. Add pimentos, gravy mix, peas, carrots and soup in pot and bring to a boil. Bone chicken and add to sauce. Serve over rice.
