EASY CHICKEN POT PIE 
1/2 c. instant mashed potatoes, dry
2/2 c. hot water
1/3 c. shortening
1 c. flour
1 tbsp. baking powder
1/2 tsp. salt
Milk, as necessary

Pie filling
2 c. cut up cooked chicken
1/2 tsp. salt
1/8 tsp. pepper
1/2 c. milk
1/2 c. sour cream
1 (10 3/4 oz.) can cream of chicken soup
1 (10 oz.) pkg. frozen green peas

Crust - Mix potatoes and water in medium bowl. Let stand until water is absorbed. Mix in shortening, flour, baking powder, and salt. Stir in milk as necessary to form a dough which may be patted out to fit over the filling.

Filling - Combine ingredients in baking dish, 8 inch square or similar size. Pat dough into shape to fit over top. Bake pie at 375 degrees or 30-35 minutes or until crust is golden brown. Served 4-6.
