SAUSAGE STUFFED MUSHROOMS 
1 lb. mushrooms (about 20)
1/3 c. chopped scallions
1 egg, lightly beaten
1/3 c. dry bread crumbs
1/2 lb. Italian sausage
1/2 c. chopped tomato
1/4 c. chopped green peppers

Preheat oven to 375°F. Wipe mushrooms with damp paper towels. Remove stems; set caps aside.

Remove sausage meat from casings and cook in skillet. Remove cooked meat, saving drippings. To drippings, add tomato, scallions and green peppers. Sauté 3 to 5 minutes or until tender but not browned. Add sausage and mix well.

Add egg and bread crumbs; stir until blended.

Stuff mushrooms with sausage mixture, mounding the tops. Place on greased baking sheet and bake 20 minutes or until filling is hot and mushrooms are cooked through.
