VEAL SCALLOPINI 
2 med. onions, sliced
1 lb. veal cubed
1/4 c. oil
2 cloves garlic, minced
1 tsp. oregano
1/3 c. sherry
1 lg. can tomato paste
2 cans water
1/2 tsp. sugar
Pinch of baking soda
1 (10 oz.) package green peas
1/2 lb. mushrooms
2 or 3 green peppers, sliced

Brown veal in oil. Add garlic and onion, oregano. Salt and pepper to taste. Add sherry and simmer for 2 minutes. Add past, water, sugar and baking soda. Cook until meat is tender. About 20 minutes before serving, add peas. Saute mushrooms and peppers in a little butter and add to veal mixture. Serve with or without noodles
