SIMPLE CHICKEN SOUP 
3 lbs. chicken wings, necks, and backs
2 sm. carrots, peeled and chopped
3 celery stalks, cut into 2-inch pieces
1/3 c. chopped onions
1/2 tsp. salt
1/2 tsp. pepper
3/4 tbsp. chopped parsley
Water

Place all of the ingredients into a large soup pot with enough water to cover. Cover and bring to a boil. Skim the top, lower heat, and simmer for 1 3/4 hours. Remove chicken pieces, debone and cut meat into bite-size pieces and return to pot. Stir and serve.
