MALFATTI'S 
1 lb. ricotta cheese
2 eggs, beaten
1 c. bread crumbs
1 (10 oz.) pkg. chopped spinach, thawed
1/2 c. Parmesan cheese
Salt and pepper to taste
1 clove garlic, crushed

Thaw frozen spinach and squeeze out excess moisture. Combine all ingredients. Mix with hands. Roll into strips about 3/4 inch in diameter. Cut into 1-inch strips and roll in flour. Cook in gently boiling, salted water until malfatti's come to surface. Lift out of water with slotted spoon. Place on warm serving platter and top with spaghetti sauce.
