FRESH SPINACH SALAD 
6 c. lightly packed torn spinach
3 hard cooked eggs, finely chopped
12 strips bacon, cooked crisp & crumbled

SWEET & SOUR DRESSING:

1/2 c. vegetable oil
1/4 c. white wine tarragon vinegar
1 1/2 tsp. sugar
1/2 tsp. tarragon
1/8 tsp. pepper
1/4 tsp. salt

Mix all dressing ingredients until mixture is thoroughly combined. Refrigerate 20 minutes. When ready, pour over salad.
