FRESH SPINACH TARRAGON SALAD 
1 bunch fresh young spinach leaves, washed & stems removed
2 hard boiled eggs, chopped fine
4 to 6 slices bacon, cooked crisp & crumbled

Place spinach leaves in a chilled salad bowl and toss lightly with enough dressing to coat well. Sprinkle with egg and top with bacon. Serves 4.
