SPANISH RICE WITH CHEESE 
4 slices uncooked bacon, chopped
1 sm. onion, sliced
1/2 c. green pepper
1 can tomatoes (med. size)
1 can tomato sauce
1 tsp. salt
1/8 tsp. pepper
3 c. cooked rice
2 c. shredded cheese
Paprika

Cook bacon, onion and green pepper in saucepan until vegetables are tender and bacon is crisp, drain fat. Stir in tomatoes, tomato sauce, salt and pepper. Simmer, uncovered for 5 minutes. Stir in cooked rice and 1 1/2 cups of cheese. Cook until cheese is melted. Pour mixture into buttered 9 inch square baking dish. Sprinkle with remaining cheese on top. Dust lightly with paprika. Broil until cheese is melted and serve immediately. Serves 6 to 8 people.
