LOW-SODIUM LEMON BAKED CHICKEN 
1 (2 1/2 to 3 lbs.) frying chicken, cut in serving pieces
3 tbsp. vegetable oil
3 tbsp. fresh lemon juice
1 crushed clove garlic
Dash pepper
Chopped parsley

Heat oven to 350 degrees. Arrange chicken in shallow casserole or baking dish. Mix all other ingredients and pour over chicken. Cover and bake until tender, about 45 to 50 minutes. Uncover for the last 10 minutes to allow chicken to brown. Sprinkle with chopped parsley. For fat-controlled diet, skin should be removed from chicken. Serves 4.
