MUSTARD CHICKEN WITH TOMATOES 
1/2 c. mayonnaise
5 tsp. Dijon mustard
1 tbsp. red wine vinegar
Salt and pepper
3 tbsp. oil
1 rotisserie cooked chicken
4 slices tomatoes
2 tsp. chopped fresh herbs (chives and parsley)

Combine mayonnaise, mustard, and 3 tablespoons water. Combine vinegar, 1/2 teaspoon salt and 1/8 teaspoon pepper and oil. Remove skin from chicken and quarter. Arrange chicken and tomatoes on platter. Coat chicken and cover with herbs. 548 calories.
