BLACKBERRY CAKE | |
1 c. (2 sticks) butter 2 c. sugar 4 eggs 2 3/4 c. all-purpose flour 3 tbsp. cocoa 1 tsp. baking soda 1 tsp. cloves 1 tsp. allspice 1 tsp. cinnamon 1 tsp. vanilla 2 c. blackberries and juice Preheat oven to 350°F. Cream together butter and sugar. Add eggs and beat 1 minute. Stir dry ingredients together. Alternately add the dry ingredients and the berries to the batter, beating well after each addition. Add vanilla; beat 1 minute. Pour into a greased and floured pan. Bake. When cake is done, it can be sprinkled with powdered sugar while still warm or iced with vanilla frosting when cool. Cake flavor improves if it is allowed to mellow 1 to 2 days before serving. |
