BLACKBERRY JAM CAKE (OLD FAMILY
RECIPE)
 
2 cubes butter
1 tsp. of each cinnamon, cloves and allspice
4 eggs
1 1/2 c. sugar
1 c. buttermilk with 1/2 tsp. of baking soda mixed in
2 c. blackberry jam
3 c. flour
1 tsp. vanilla (adjust to taste)
Salt to taste

Cream butter; mix in next 7 ingredients one at a time, mixing well after each addition. Stir in flour 1 cup at a time, then add vanilla and salt. Pour into 3 greased and floured 8 or 9 inch round cake pans. Bake at 350 degrees for 30 minutes or until cake springs back to touch. Cool and frost.

CREAM CHEESE FROSTING:

1 stick butter
8 oz. cream cheese

Cream together and then mix in:

1 box powdered sugar
1 c. fine shredded coconut
1 c. chopped nuts (walnuts fine, pecans are best)
