ITALIAN EGGPLANT CASSEROLE 
2 c. cooked noodles
2 c. cooked tomatoes
1 c. sliced green peppers
1 c. diced onions
1 1/2 c. grated cheese
Flour
Salt and pepper
Butter
3 med. eggplants

Place in layers in 16x10x2-inch deep pan, cooked noodles, tomatoes, green pepper, onion. Sprinkle each layer with a little flour, salt and pepper. Cover each layer with eggplant slices. Sprinkle with grated cheese. Dot with butter. Top with cracker crumbs. Bake at 350 degrees for 1 hour.
