SWEET SPANISH ONION PULL-APARTS | |
2-3 sweet Spanish onions Vegetable oil for frying 1 1/2 c. ice water 1 extra-lg. egg yolk 1 1/2 c. all-purpose flour 1 1/2 tbsp. cornstarch 1. Cut onions crosswise into thin slices; separate slices into rings. Cut larger rings crosswise into halves. Heat oil in deep fat fryer to 375 degrees. 2. Beat ice water and egg yolk in large bowl. Add flour and cornstarch all at once; stir briefly with fork just to combine. Batter will be lumpy; do not overmix. 3. Add onion rings to batter; stir to coat well. Remove rings, letting excess batter drain off; stack rings in basket of deep-fat fryer. Fry in oil until crisp and golden. Remove from basket and drain on paper toweling. Serve with forks to pull rings apart. |
