SPANISH STYLE ONIONS WITH
PEPPERONI
 
3 med. onions, grilled
4 med. sweet red peppers, grilled
1 med. green pepper, grilled
1/4 c. dry sherry vinegar
3/4 c. olive oil, salt, pepper to taste
1 lb. pepperoni, thinly sliced

Grill onions and peppers until skins are blackened on all sides. Peel, seed and slice. Combine vinegar, oil, salt and pepper. Pour over vegetables, let marinate for 30 minutes. Toss with slices pepperoni before serving.
