SQUASH CASSEROLE 
Squash to yield 3 c. cooked
1 onion, chopped
1 carrot, grated
2 oz. pimentos, chopped
1 can cream of chicken soup
1 c. sour cream
1 pkg. Pepperidge Farm herb stuffing

Cook squash and onion until tender. Add remaining ingredients, except herb stuffing. Place layer of stuffing in casserole. Top with squash mixture. Top with remaining stuffing. Bake at 350 degrees for 30 minutes. Yields 8 servings.
