PUMPKIN GEMS 
1 1/3 c. sugar
1/3 c. shortening or oil
2 eggs
1 c. mashed pumpkin
1 1/3 c. flour
1 tsp. baking soda
1/4 tsp. baking powder
3/4 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. vanilla
1/3 c. water
1/2 c. chopped nuts

In large bowl beat together sugar, shortening or oil and eggs. Stir in pumpkin. Stir together flour, baking soda, baking powder, salt, cinnamon and nutmeg. Add to pumpkin mixture. Stir well. Mix in vanilla, water and nuts. Microwave 6 muffins at a time in paper lined microwave containers for 3 1/2 to 4 1/2 minutes at medium high power (7). Makes 25 gems. Sprinkle on top with cinnamon.

Since microwave ovens vary in power, you may need to adjust your cooking time.
