BASIC MARINARA SAUCE 
Onion, chopped
Green pepper, chopped
Chopped garlic
Sweet basil
Cayenne pepper
Salt
2 tbsp. sugar
2 tbsp. olive oil
2 lg. cans crushed Italian tomatoes

Saute onion and green pepper and garlic in olive oil for 3 minutes. Add tomatoes and other spices to taste. DO NOT add water. Simmer for 2 hours.

This sauce is great over shrimp and scallops and spaghetti. Also good with veal and peppers, meatballs or sausage.
