BRAN PUMPKIN BARS 
1 1/2 cups bran cereal (I use Fiber One original)
2 cups sugar
2/3 cup vegetable oil
1 (15 oz.) can pumpkin (Libby's)
6 egg whites or 4 eggs
1 1/2 cups all-purpose flour
2 tsp. baking powder
2 tsp. ground cinnamon
1 tsp. baking soda
3/4 tsp. salt
1/2 cup raisins or chopped nuts

Preheat oven to 350°F. Grease and flour jelly roll pan, 15x10x1-inch. Crush cereal.

Stir together cereal, sugar, oil, and pumpkin in a large bowl. Let stand 10 minutes.

Stir in eggs and mix until well blended. Stir in remaining ingredients. Spread in pan.

Bake at 350°F for 25 to 30 minutes or until top springs back when touched lightly. Cool completely.

Sprinkle with confectioners' sugar if desired. For bars, cut into 7 rows by 7 rows. Refrigerate any remaining bars.

Makes 49 bars.
