FRANCES'S SPINACH SALAD | |
1 lb. fresh spinach 1 apple, unpeeled, cored and cut in thin wedges 2 tbsp. lemon juice 3 green onions, sliced 1 (2 oz.) pkg. toasted almonds, sliced 2 slices bacon, cooked and crumbled 1/3 c. veg. oil 1/3 c. red wine vinegar 2 - 3 tsp. sugar 3/4 tsp. dry mustard 1/4 tsp. salt 1/4 tsp. pepper Remove stems from spinach; wash leaves thoroughly and pat dry. Tear into bite-size pieces. Toss apple wedges in lemon juice; drain. Combine spinach, apple wedges, green onions and almonds; toss with bacon if desired. Combine oil and remaining ingredients in a jar. Cover tightly and shake vigorously (it's best if made the day before). Before serving, pour dressing over spinach mixture; toss. Yield: 6 servings. |
