VEGETABLE CURRY 
1 med. onion, chopped
3 tbsp. whole wheat flour
1 c. chicken broth, defatted
1 1/2 tsp. curry powder
1/2 c. water
1 c. broccoli flowerettes
1 c. cauliflower pieces
2 med. carrots, sliced
4 stalks celery, sliced
1 lg. zucchini, sliced
1 med. red or green pepper, chopped
1/2 c. frozen green peas
1 (8 oz.) can water chestnuts
1/2 c. raisins

Saute onion in a little water until soft. Add flour, chicken broth, curry powder, and water. Bring to a boil and add broccoli, cauliflower, carrots, and celery. Cook until veggies start to get tender (broccoli will be bright green). Add zucchini and bell pepper. Cook for about 3 to 5 minutes. Add peas, water, chestnuts, and raisins. Heat another 3 minutes. Serve plain for weight loss or serve over brown rice.
