VEGETABLE SANDWICHES 
2/3 c. carrots, grated
1/4 c. minced cucumbers
1/4 c. minced onion
1/4 c. minced green pepper
1/4 c. minced celery heart
Dash salt
1 tbsp. lemon juice
3 oz. cream cheese, softened
1/4-1/3 c. mayonnaise
5-6 slices white bread, crust removed
5-6 slices whole wheat bread, crust removed

Combine carrots, cucumbers, onion, green pepper and celery. Drain well. Combine salt, lemon juice, cheese and mayonnaise, blending well. Stir in vegetables. Spread on white bread and top with whole wheat bread. Cut into finger sandwiches, if desired.
