ALMOND BUBBLES | |
1/2 c. soft butter 2/3 c. sugar 1/8 tsp. salt 2/3 c. flour 1 tsp. grated lemon peel 1 c. chopped almonds 1/2 tsp. vanilla Confectioners' sugar Icing (below) Combine all ingredients, except icing in large mixing bowl. Mix on lowest speed or by hand until dough forms. Chill until firm enough to handle. Heat oven to 375 degrees. Roll dough into 1 inch balls. Place 2 inches apart on ungreased baking sheet. Bake 8-10 minutes or until flat, light tan and bubbly. (You may have to take them out half way into baking time and flatten with the bottom of a glass.) Cool slightly; remove carefully from baking sheet. While still warm, drizzle with confectioners' sugar icing. Makes about 3 1/2 dozen. CONFECTIONERS' SUGAR ICING: Combine 1 cup powdered sugar, 4 teaspoons water and 1/2 teaspoon almond extract. Add small amount of water if necessary. |
