BUTTERMILK BREAKFAST CAKE | |
3 c. flour 2 c. sugar 3/4 c. butter, softened 2 eggs 1 tsp. vanilla 1 tsp. baking soda 1 c. buttermilk 1 tsp. cream of tartar Mix flour, sugar and butter until crumbly. Set aside 1 cup crumbs for topping. Mix buttermilk with baking soda - let fizz. Add it, plus all other ingredients to the dry mixture. Blend well. Divide batter among 2 large or 3 small greased aluminum pie plates. Sprinkle reserved crumbs over top. Bake at 375 degrees for 35 to 45 minutes or until a cake tester comes out clean. Cool in pans. These freeze very well - just wrap entire cake with pan in heavy duty foil or freeze wrap. |
