IRISH POTATO PIE 
2 deep dish pie crusts
3 cups cooked and mashed potatoes
2 cups sugar
1/2 stick butter
1/2 tablespoon vanilla
6 eggs
1 can evaporated milk
Milk, enough to top out blender

Mix all ingredients in blender. Top off with milk. Blend. Pour into pie shells.

Bake at 350°F for 45 minutes or until completely set.
