SPICED TURKEY (CAN BE DONE IN
MICROWAVE)
 
1 med. onion, sliced in rings
1 c. or med. green pepper (3/4 inch pieces)
1 med. carrot, sliced
1 tsp. chili powder
1/2 tsp. ground ginger
Hot cooked rice
1/2 of 15 oz. can garbanzo beans, rinsed
1 (7 1/2 oz.) can tomatoes
1/3 c. tomato paste
1/4 c. raisins

In 2 quart microwaveable safe casserole, combine onion, peppers, carrot, chili powder, ginger, 1/4 cup water and 1/4 tsp. salt. Cover. Cook on high 5 to 7 minutes or in a low oven 10 or 12 minutes or until crisp and tender. Stir once.

Stir in turkey or chicken, undrained tomatoes, tomato paste and raisins. Cover, cook on high 5 to 7 minutes or in low watt oven 10 to 12 minutes until hot, stirring once. Serve on rice.

Since microwave ovens vary in power, you may need to adjust your cooking time.
