BUTTERMILK BISCUITS 
2 1/4 c. flour
2 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
6 tbsp. shortening
1 c. buttermilk

Mix dry ingredients together in a mixing bowl. Using a fork or pastry blender, blend in 1/4 cup shortening (4 tablespoon), (two thirds of the total amount of shortening called for) until mixture is coarse and grainy. Then, using a fork, stir in buttermilk. Do not over mix. Put dough out on a floured board or marble pastry board and knead a few times.

Pat out dough to about 1/2" thick. Cut with a floured biscuit cutter or a glass. Do not handle the dough too much or it will get tough.

Use a heavy black iron skillet, place remaining 2 tablespoons (1/3 of total) in skillet and put skillet in oven about 7 minutes. Remove skillet from oven and place biscuits in pan. Turn each once in oil. Bake biscuits at 500 degrees for 10 minutes or until light brown.

You get 2 biscuits per serving, 4 servings.
