BUTTERMILK PANCAKES FOR SIX 
1 3/4 to 2 c. flour
2 tsp. baking powder
1 tsp. baking soda
2 tbsp. sugar
2 eggs
2 c. buttermilk
3 tbsp. oil
Vegetable cooking spray to coat griddle surface

Mix in order given, using a whisk. Preheat griddle. Correct temperature is reached when several drops of water "dance" on griddle surface. Drop batter by spoonfuls on griddle. The cakes are ready to turn when bubbles appear on the surface and begin to burst. This recipe makes a very light pancake.
